Friday Fun - Savor the Flavor of: Melon Granita

It's been a brutally hot week in many areas of the US, and the less cooking you have to do when it's hot, the better, so I thought I'd post a quick and easy dessert that requires no cooking and is refreshing and healthy!


Melon Granita

Ingredients

  • 1/2 cup agave nectar
  • 4 cups (1 3/4 pounds) cubed seedless watermelon, honeydew, cantaloupe or other summer melon
  • 1 tablespoon fresh lime juice

Preparation  

Purée all ingredients in a blender until smooth. Pour into a 9x9x2" metal baking pan, cover with plastic wrap or foil and freeze mixture for 1 hour. Remove from freezer and stir to make sure that the slush doesn't have any large pieces of fruit or frozen areas. If you find any, simply mash them with a fork or slotted spoon. Replace cover and freeze until firm, at least 2 hours. Using a fork, scrape granita vigorously to form icy flakes. Use ice cream scoop or large spoon to spoon flakes into a cup or bowl. This can be made up to two days ahead of time.
