Heavenly Honeydew

Honeydew is one heavenly melon. The sweetest of the common melons, it's also a great source of potassium and vitamin C...and the delicate pale green color of a ripe honeydew is amazingly beautiful as you'll see in these great honeydew green items!

Honeydew, both the color and the fruit, is delicious - and I thought that you might just be interested in a not-so-run-of-the-mill way to incorporate this sweet and nutritious melon into your meal planning, so I'm ending with a favorite recipe for a honeydew salsa. It's got that icy-spicy-cool thing going and tastes wonderful with tortilla chips as an appetizer or snack or as a garnish for grilled chicken or seafood. (If you're really not a honeydew fan, you can also make this with cantaloupe!) Enjoy!


Honeydew Salsa
1 1/3 cups finely diced peeled seeded honeydew or other melon
1/4 cup finely chopped fresh cilantro plus 1/4 cup cilantro leaves
1/4 cup finely diced red onion
2 tablespoons fresh lime juice
2 tablespoons olive oil
2 teaspoons finely grated lime peel
1 teaspoon finely chopped seeded serrano chile

Combine the diced melon, chopped cilantro, red onion, lime juice, olive oil, grated lime peel, and chopped serrano chile in medium bowl. (If you want a milder salsa with less heat, remove the seeds before you chop the serrano pepper) Toss lightly to blend flavors. You can add just a touch of salt and pepper to bring out the sweetness of the melon. Chill if desired and serve with chips or as a garnish for your favorite chicken or fish entree.
